Ice cream with green tea

   In hot summer, ice cream is the most coveted dessert. The composition of the commercial version, of course, leaves much to be desired. But there is a simple, tasty and, above all, a useful alternative. It will please children, and vegan and raw food, those who do not use sugar, diabetics, and in general, everyone who loves ice cream.

   We need (6 servings):
 - a branch of ripe bananas
 - 1 tbsp powder of matcha green tea
 - 1 tbsp of coconut oil (you can have coconut cream or just butter of good quality)
 - 1 tbsp of natural honey
 - a pinch of salt.
   First way: peeled bananas are blended in a blender with the rest of the ingredients, put into a glass container and sent for an hour in the freezer. Periodically take out and mix the whisk.
   Second way: pre-peeled and frozen bananas whisked in a powerful blender with the rest of the ingredients. This method is faster, since ice cream can be served immediately. You only need to take care of the pre-frost bananas.
   If you do not have a matcha tea do not necessarily attach to this recipe. You can add cocoa powder and make chocolate ice cream. Vanilla, strawberry, blueberry ... Decorate with nuts, fresh berries, coconut shavings.  


   Baked quinces, raisins and Brazil nuts
 

   Quince has many beneficial properties for the human body. It is very rich in vitamin C, antioxidants, fiber and beneficial tannins. It also contains appreciable amounts of iron, copper, magnesium, potassium and B vitamins have antibacterial and anti-inflammatory properties. This is one of the few fruits that are best eaten in processed form as fresh quince somewhat edible. But out of it obtained the most delicious desserts and jams.

   The easiest option dessert - it is certainly just baked quince. In my version with raisins and Brazil nuts.
   Quince is well washed, cut in half and take out the seed box. Keep in mind that the seeds are very toxic, in that they should not eaten raw.
   Inside the deepening spread raisins, chopped Brazilian (or any other) nuts and bake at 200 degrees about 20-30 minutes. Quince should be quite soft, but keep the shape.
   After that, we give cool slightly and pour honey or maple syrup. I sprinkled more chia seeds.
   This treat can be a dessert or a light lunch. Especially tasty herbal tea.  


   Classic vanilla marshmallows
 

   Marshmallow is considered a delicacy light and low-calorie. I honestly do not think so. Yes contains no flour and fat compared to other desserts, but sooooo much sugar. As in the case of marmalade was thinking whether it is necessary to write this recipe, because the resource for the most healthy and useful food, but I understand that not everyone can Wake up in the morning with the feeling that the best sweets are fruit. Many are only in transit and not willing to give up traditional desserts. In this, if to eat, and especially to give to children, only
good quality and hand-made. And although my recipe is a little bit under adaptive a healthier version, to get involved still don't advise you.
   I've been experimenting and trying to cook the marshmallows in different, healthier versions, trying to make it vegan with egg substitute instead of the protein by adding a portion of honey instead of sugar, etc. Nothing happened. The marshmallow product is a little capricious, and therefore no deviation from the recipe is not recommended.
   If you get good at it, you can safely plan on a large number of people (children's party, for example), because the output is 40 pieces mini marshmallows.
   We will need:
 - 4 average domestic apples (preferably seasonal and fragrant)
 - 250 g cane sugar in applesauce
 - 1 organic egg white
 - a sachet of vanilla sugar or 1 vanilla pod
 - 8 g agar
 - 160 ml of water
 - 470 g of cane sugar syrup
 - 2 tbsp powdered sugar
   1. Agar soaked in room temperature water and set aside.
   2. In advance prepare a pastry bag with a nozzle asterisk. Important it is a large bag or a syringe, because the mass solidifies quickly and apply a lot of times you will not have time.
   3. Washed apples cut in half, remove the seed box and bake in the oven or microwave for about 10 minutes, depending on the apples. The main thing is to get a soft middle.
   4. The baked apples with a spoon take out the pulp and grind it into soft puree.
   5. Warm applesauce, add sugar, vanilla sugar or the contents of a vanilla pod (this option I like more, black dots give Marshmallow the nobility of a good dessert) and mix everything. Leave to cool.
   6. A pot of soaked agar put to heat, stirring occasionally, so that the agar is well dissolved. Bring almost to a boil and pour the sugar. Stir until smooth and bring to a boil. Reduce the heat and cook for another 5 minutes. When the syrup begins to bubble vigorously, remove from heat and set aside for a while.
   7. Apple sauce put into a voluminous bowl. While beating the mixture will increase quite a lot. Carefully separate the egg white from the yolk and break up slightly with a fork. Half of the protein is added to Apple puree and begin to blend about 3 minutes. The mixture should turn white. Add the remaining protein and beat until thick fluffy mass. Protein is important to whip or he then will depart and your marshmallows will not work.
   8. A thin stream slowly pour in hot syrup, still whisking.
   9. Continue whisking mass for 5-7 minutes more until it becomes a dense and well-shaped.
   10. At this stage, we have to act fairly quickly, as weight with agar get sticked very fast. Fill a pastry bag and despensed in the form of round cookies on the baking paper.
   11. Leave to dry. Time it may take different, about 5-15 hours. The marshmallow needs to harden and be covered with a thin sugar crust.
   12. Grind a little cane sugar in a coffee grinder or blender to powder it finely and sprinkle with marshmallows, in order to be easy to remove from the paper and he did not stick to hands. The bottoms of the marshmallow is still quite wet and they can easily stick together in pairs.
   Enjoy! Just don't eat all the marshmallows at once.


   Orange-ginger marmelad
 

   When really want something sweet but light version - marmalade or marshmallow first thing that comes to mind. I think that a bit too much sugar in it, but you can reduce the amount in the recipe. It is anyway better than the store bought sweets. Couple of marmalade for tea cubes can sometimes treat yourself if you do not have restrictions on sugar. Especially the orange and ginger Is a great combination with black tea at the autumn evenings.
   Approximately 30 pieces we will need:

 - 300 ml of freshly squeezed orange juice (with pulp can be)
 - 250 grams of raw cane sugar
 - 2 tbsp. agar
 - 1 tsp grated ginger
   In 150 ml of juice stir the agar and leave to the side
   In the rest of the juice add sugar, put over medium heat and stir until sugar is dissolved.
   When the sugar has dissolved pour the juice agar and bring to a boil over medium heat. Boil about 3-5 minutes. It is important that the temperature does not rise above 120 degree because than agar slightly loses its properties.

   At the very end we add the grated ginger. Remove from the heat. We give a few minutes to cool and pour into molds. I usually use silicone one for the cake. It is easy to take out from it. Just place it on a cutting board or-no-be on what will be convenient to rearrange then in the refrigerator, if your form is easy to foldaway.
   Reserve for 10-15 minutes at room temperature until cool, and then send in the refrigerator.
   About 20 minutes later (the marmalade should be easy to remove away from the side) take out from refrigerator and cut into squares.
   Before serving, sprinkle with cane sugar. If you want the marmalade sfay in sugar for few days and did not melt it better to dry (pre-roll in sugar) in the oven at 100 degrees.  Optionally, you can do the same lemon marmalade, add ginger cloves instead of - in general, what yiu like.
